Is Instant Coffee Real Coffee?
It is entirely coffee and nothing but coffee. What separates it from the cup you brew is not an ingredient, it is what the drying process took away and never gave back.

Yes. Instant coffee is coffee, brewed at industrial scale and then dried. There is no additive, no substitute and no filler in a plain instant: what you buy is the solids that were dissolved in a real brew, with the water taken out.
That makes the honest question a different one. Not whether it is real, but what the drying costs.
How it is made
A factory brews coffee very strongly, then removes the water one of two ways.
Spray drying pumps the concentrate through a nozzle into a tower of hot air. The droplets dry in flight and fall as powder. It is fast and cheap, and the heat drives off a great deal of the aroma along with the water.
Freeze drying freezes the concentrate solid, then puts it under vacuum so the ice turns straight to vapour without melting. No high heat is involved, so far more of the aromatic compounds survive. It is slower and more expensive, and it is what the granular, crystalline instants are.

Why it tastes flatter
Aroma is most of flavour. What you experience as a coffee's character is largely volatile compounds reaching your nose, and volatile means exactly what it sounds like: they leave.
Every stage of making instant gives them an opportunity. The industrial brew, the drying, and then months or years in a jar. Freeze drying protects them far better than spray drying, but nothing puts back what evaporated in a factory.
What survives best is body and bitterness. What goes first is the top end, the florals, the citrus, the delicate fruit. Which is why instant made from a light Ethiopian rarely tastes like the bag it came from, and instant built on a darker blend loses proportionally less.
Is it weaker in caffeine?
Per cup, usually a little, because the standard serving is smaller: about 60 to 80 milligrams against 95 or more for brewed. That is a dose difference, not a property of instant coffee, and using two spoons closes it.

Where specialty instant has actually closed the gap
The interesting development is not better factories, it is better input. Specialty roasters have started freeze drying good single origins rather than commodity blends, which was never worth doing when the process destroyed most of the character anyway.
These are not cheap. Our Intelligentsia instant entries record $2.60 a serving, which is more than most coffee bags and more than brewing a good bag at home. You are paying for a specialty coffee and a slow process at a small scale.
Worth it? For a hotel room, a plane or a hike, genuinely. For the kitchen where you own a brewer, no.
Where instant simply wins
Cold water. Instant dissolves in it. No brewed coffee does, which makes instant the only way to make iced coffee in fifteen seconds and the only sensible option for stirring into food.
Shelf life. The water is gone, so there is very little left to stale. A jar opened a year ago is largely what it was. Ground coffee from the same day is not.
Nothing to clean, and no equipment. A coffee bag needs three to five minutes and a bin for the bag. Instant needs a spoon.
How to make it taste better
Use water off the boil rather than boiling, exactly as you would for brewed coffee. Boiling water scalds instant and it does taste harsher.
Dissolve it in a splash of cool water first, then top up with hot. It dissolves more evenly and you avoid the scorched note.
And use more than the jar suggests. Most instant is dosed to a serving size chosen for economy, and a weak instant is the flattest coffee there is.
The honest summary
Instant is real coffee that has been through a process which costs it aroma. A good freeze-dried instant is a perfectly decent drink and better than a badly brewed cup of anything. It is not, and will not be, a substitute for grinding fresh beans into a brewer, because the thing it lost is the thing you would be buying them for.
