Taste and roast consistency, which carry no number

Taste is the heaviest criterion in the category, weighted at 28 out of 100, and roast consistency, whether the same bag tastes the same twice, is weighted at 12. Nobody publishes a figure for either, and a proxy built out of roast level would be a guess wearing a score. Both show a dash rather than a zero on every coffee page, and their weight comes out of the total instead of counting against the coffee.

Freshness is 20 points, and the roast date is most of it

Coffee is at its best somewhere between three days and about a month after roasting. A best-before date twelve months out tells you nothing about where in that window your bag sits, and a supermarket bag has usually spent months of it on a pallet. Specialty roasters print a roast date. Large brands mostly do not.

A printed roast date

The largest share of the criterion. It is the difference between knowing and hoping.

More than a best-before date

A bag that only carries a best-before date scores lower than one that says when it was roasted.

Shipped within three days of roasting

Full points; more than two weeks scores least.

A one-way valve

It lets roasting gas out without letting air in.

A roaster who names the farm usually has a reason to, which makes this a quality question as well as an ethical one.

The origin, altitude and varietals named

Each earns points on its own, and together they tell you the coffee came from somewhere in particular.

The farm or co-op named

It earns points beyond the country.

Certifications and direct trade

Two or more certifications score full points, and direct trade earns its own share.

Single origin or blend

A single origin scores a little above a blend here, though neither is better in the cup. A single origin tastes of somewhere and rewards filter brewing; a blend is built to taste the same every time and suits espresso and milk.

Value per kilo is 14 points

A 250 g bag at $18 and a 907 g bag at $42 look like the big one is the expensive one. Per kilo they are $72 and $46. Every coffee page shows price per kilo beside the bag price, and the score compares it with the rest of the category, not the bag price, because bag sizes here run from 283 g to a kilo. A coffee needs a published price and at least three rivals to be scored on it.

The same arithmetic shows what pods cost. Black Rifle's AK Espresso, sold as beans and as K-Cups by the same roaster:

5 lb bag works out at about $0.53 a cup
12 oz bag about $0.75 a cup
50-count K-Cup box about $0.86 a cup
12-count K-Cup box about $1.08 a cup

Identical coffee. The pod is roughly double the bag, and buying the largest bag rather than the smallest saves about 29 percent.

Before you buy

Flavoured coffee and tasting notes are two different things

A Kenyan tastes of citrus because of where it grew and how it was processed. A salted caramel coffee tastes of salted caramel because flavouring was added after roasting. Both are legitimate, and someone shopping for one is very often avoiding the other, so here they are separate: tasting notes describe the coffee, added flavour describes what was put on it. Flavoured coffee also tends to cost more per kilo than the same roaster's plain line.

Before you buy

Whole bean if you can, ground if you will actually drink it

Ground coffee stales in days rather than weeks, so whole bean is better if you own a grinder. If you do not, buying ground is a better decision than buying beans you will not grind. Where a roaster sells both, our pages say so, and the price is usually identical.

How long does coffee stay fresh after roasting?

Roughly three days to a month for whole bean, and a few days once ground. That window is why a printed roast date matters more than a best before date: a best before twelve months out cannot tell you where in the window your bag sits. Coffee does not become unsafe after that, it just flattens out and loses the aromatics that made it worth buying.

Are K-Cups more expensive than buying coffee beans?

Yes, and by roughly double. Comparing one roaster's identical coffee, a 50-count K-Cup box works out around $0.86 a cup against about $0.53 for the same coffee in a 5 lb bag. The convenience is real and so is the cost. If you have settled on pods, the larger boxes are meaningfully cheaper per cup than the 12-count.

What is the difference between flavoured coffee and tasting notes?

Tasting notes describe flavours the coffee already has from where it grew and how it was processed, so a Kenyan may read as citrus without anything being added. Flavoured coffee has had flavouring applied after roasting, which is how you get pumpkin spice or salted caramel. We keep them as separate filters, because someone shopping for one is usually avoiding the other.

Should I buy whole bean or ground coffee?
