Coffee with berry notes

Berry is the most talked-about note in specialty coffee and the most divisive. It is rarely subtle: a naturally processed Ethiopian can taste so much of blueberry that people assume something was added. Nothing was, and how the coffee was dried is the reason.

The process puts it there, not the variety

After picking, a coffee cherry has to be separated from its bean. A washed coffee has the fruit stripped off before drying, which gives a clean, acidic cup. A natural is dried whole, in the cherry, over weeks, and the fruit ferments gently against the bean and goes into it. That is where berry comes from. Honey and experimental processes sit between the two. A serious bag names the process next to the origin, and one that does not is withholding the thing that explains the flavour. Natural process is a choice, not a quality grade

Done carefully it is extraordinary. Done carelessly the fermentation goes past fruit into something boozy and sharp, and the line between the two is thin. This is why naturals split opinion: people who dislike them are often reacting to a real fault, and people who love them are tasting the same process done well.

Blueberry coffee is sometimes flavoured, and that is a different aisle

Search results mix two products. One is a naturally processed coffee whose fruit is intrinsic. The other is a flavoured coffee with blueberry flavouring applied to roasted beans, sold cheaper and tasting sweeter and more obvious. Both are bought on purpose and neither is a scandal. What matters is that the bag says which, and where a roaster states it, we record it.

Roast it light or lose it

Fruit is the first thing a hard roast destroys. Berry coffees are light and medium-light almost without exception, and the same lot taken to a dark roast would taste of roast and nothing else. Brew it as filter, where there is nothing to hide behind, and keep the water off the boil.

Who it is not for

Anyone buying coffee for milk drinks, and anyone who wants the same cup every morning. These are seasonal lots and a new harvest is a new coffee. Blends exist precisely for people who do not want that, and the choice between them is a real one rather than a matter of quality.
