About coffee with stone fruit notes

Stone fruit is the middle ground of fruity coffee. Peach, apricot, nectarine and plum: rounder and less sharp than berry, sweeter and less aggressive than citrus. It is where a lot of people who thought they disliked fruity coffee find they do not.

It usually means washed, and lightly roasted

Washed coffees have the fruit stripped from the bean before drying, which produces clarity and structured acidity rather than the jammy heaviness of a natural. At a light or medium-light roast, that clarity reads as stone fruit. Ethiopian and Kenyan lots are the classic examples, and Ethiopian coffee goes region by region.

Dried stone fruit is a different signal

Prune, raisin and dried fig are stone and vine fruit that has lost its acidity, and they point the other way on the roast scale: into medium-dark, where the fruit is a memory rather than a fresh flavour. If a bag says prune rather than plum, expect a heavier, sweeter, much less acidic cup.

The most forgiving of the fruity notes

Berry coffees punish a careless brew by tasting sharp; stone fruit tends to just taste less interesting. That makes this a sensible place to start if you are moving from supermarket coffee toward something with origin character, and you have not yet bought a scale or a kettle you can set. Brewing by weight is the next step when you want one.

Where it goes wrong

Milk, and a moka pot. Both flatten it into vagueness. This is a filter coffee and it wants a paper filter, which strips the oils that would blur the fruit. Pour over is the natural home.

Who it is for

Anyone curious about single origin coffee who does not want to be shouted at. It is the gentlest introduction to what a lighter roast actually offers, and the one most likely to convert somebody who found a natural Ethiopian too much.

Berry is jammy, sharp and usually the result of a natural process where the cherry dries around the bean. Stone fruit is rounder and softer and usually comes from a washed coffee at a lighter roast. Berry divides opinion far more.

Does stone fruit mean the coffee is fruit flavoured?

No. It describes what the coffee tastes of on its own, produced by the growing region, the processing and a lighter roast. Flavoured coffees are named after desserts and syrups rather than after fresh fruit and a country.

It has noticeable acidity, but softer and rounder than a citrus-forward coffee. Most people find it sweet rather than sharp, which is why it is the easiest of the fruity notes to start with.
