Gooseneck pour over kettles

A gooseneck kettle exists for one job: putting water exactly where you want it, at a rate you choose. A normal kettle dumps; a gooseneck pours a pencil-thin stream you can move in circles the size of a coin. For pour over that is the whole technique, and for everything else it is a slower kettle.

What the spout is actually doing

Coffee extracts evenly when all the grounds get wet at the same time and stay wet. A wide spout floods one side of the bed, digs a channel, and water runs through the hole instead of through the coffee. The narrow neck slows the flow enough that you can wet the whole bed deliberately and keep the level steady. Stovetop or electric is the first fork

A stovetop gooseneck is a kettle with a good spout and nothing else. It is cheap, it lasts, and you judge the temperature by timing or with a thermometer. An electric one adds a base, a thermostat and usually a display. If you already have a hob you like, the stovetop version buys you the pour for very little.

Temperature control is a separate feature, and it is the expensive one

Plenty of goosenecks are boil-only. If you want to set 93C and have it held there, that is variable temperature, a different specification, and it is most of the price difference across this list. Whether you need it depends on what you brew: light roasts want water near the top of the range and notice a few degrees, while a dark roasted coffee is better off the boil anyway. What to check before buying

Handle balance matters more than capacity: a full kettle held out at arm's length for two minutes is a wrist test, and a badly balanced one wobbles exactly when you are trying to be precise. Check whether the lid stays put when you tip it hard. And check whether there is plastic in the water path, which some otherwise good electric kettles have and no maker advertises.

Who does not need one

Anyone using a coffee press, a stovetop coffee maker, an automatic drip machine or a pod machine. In every one of those the water never touches your hands, so the spout changes nothing at all. Buy the kettle for the brewer you actually use.
