Kettles

A kettle boils water, which sounds like a solved problem until you try to pour 120 ml of it in a slow spiral onto a bed of coffee. Everything worth paying for in this category comes down to two things: where the water goes, and what temperature it is when it gets there.

The gooseneck is the point, not a style choice

A normal kettle spout is designed to fill a mug quickly. That is the opposite of what pour over needs, which is a thin, slow, steerable stream you can start and stop without flooding one side of the bed.

A gooseneck gives you that by narrowing the spout and moving the flow away from the body of the kettle, so the pour responds to the angle of your wrist rather than to how full the kettle is. If you brew with a V60, a Chemex or any dripper, this is the single feature that changes your cup. If you only make tea and French press, it is a nice pour and nothing more.

Temperature control earns its money on light roasts

Coffee brews best somewhere between about 90 and 96 degrees Celsius. Boiling water is 100, and the four to ten degrees in between are the difference between a bright light roast and a bitter one.

A variable kettle lets you set the number. A plain one makes you boil and wait, which works but is guesswork you repeat every morning. The gap matters most on light roasts and delicate single origins, where the margin for over-extraction is narrow, and least on dark roasts, which are more forgiving.

Temperature control carries the most weight of any criterion in this category for exactly that reason.

Hold, and why it matters more than it sounds

A hold function keeps the water at the temperature you set instead of letting it fall. Without one, a kettle that hit 94 degrees is at 88 by the time you have rinsed the filter and weighed the coffee, and the brew you dialled in yesterday is a different brew today.

It is the least glamorous feature in the category and the one that most changes whether your results repeat.

Stovetop or electric

An electric kettle heats faster, holds temperature and reads the number back to you. A stovetop gooseneck does none of that and costs a fraction as much, and if you already own a thermometer it will get you most of the way.

The honest split: electric if you brew every day and care about repeatability, stovetop if you brew occasionally or travel with it.

Capacity is usually oversold

A litre of water is around four mugs of coffee. Most pour over brews use between 300 and 700 ml, so a 1 litre kettle is plenty for one or two people and a 1.5 litre one mostly means heating water you will not use.

Bigger kettles also take longer to reach temperature, which is a daily cost paid for a capacity most people never reach.
