About coffee with creamy and vanilla notes
Creamy is the note roasters reach for when they are describing how a coffee feels rather than how it tastes. Vanilla, butter, cream and milk chocolate all sit here, and the common thread is weight in the mouth: a coffee that coats rather than one that is sweet.
Body is mostly a brewing decision
This is the useful part, because it is the one you control. Body comes from what makes it into the cup, and the filter decides that. A French press uses a metal mesh, so oils and fine particles go through and the cup is heavy. A paper filter traps both, so a pour over of the same coffee is cleaner and lighter. If you want creamy, the brewer is a bigger lever than the bag. Immersion against percolation covers the mechanism.
Vanilla is nearly always added
Roasting does not produce vanilla. When a coffee is named for it, flavouring has been applied to roasted beans, and that is one of the two or three most popular flavoured coffees there is. A coffee that reads as creamy without being flavoured is describing texture and a soft, low-acid sweetness rather than an actual vanilla flavour, and it will be far more subtle.
It is the note that survives being a latte
Body and sweetness are what get through milk. If most of your coffee is a flat white or a cappuccino, a coffee described as creamy at a medium-dark roast will still be there at the other end, where a bright citrus coffee will not. What good steamed milk actually is is the other half of that cup.
Freshness shows here more than people expect
The oils that carry body are the ones that go stale, so a creamy coffee that has sat open for a month reads flat and papery rather than merely weaker. Buy smaller bags, keep them sealed, and prefer a roaster who prints a roast date. Coffees with a printed roast date are listed separately.

Does creamy coffee contain dairy?
No. It is a description of mouthfeel: a coffee with enough body and oil to coat the tongue. Nothing is added, and it is drunk black as often as with milk.
Is vanilla coffee flavoured?
Almost certainly. Roasting does not produce vanilla, so a coffee named for it has had flavouring applied to roasted beans. A coffee that is described as creamy without being flavoured is talking about texture and soft sweetness instead.
How do I get more body in my coffee?
Change the filter before you change the bag. A French press lets oils and fines through and gives a heavy cup; paper traps both and gives a cleaner, lighter one. Grinding a little finer and using a slightly higher dose also add weight.
