About earthy and woody coffee

Earthy is the most misunderstood note on this list, because the same words describe two opposite things: a deliberate regional character that people seek out, and coffee that has simply gone old.

Wet-hulling is why Sumatra tastes like this

Indonesian producers use a process called wet-hulling, where the parchment is removed from the bean at a much higher moisture content than anywhere else and the bean finishes drying exposed. It produces a low-acid, heavy-bodied cup with cedar, tobacco and forest floor in it. This is the point of the coffee rather than a defect, and it is why Sumatra Mandheling has been a staple for decades. Nothing else on earth tastes quite like it.

Stale is not earthy, and here is the difference

Old coffee also reads as woody, but it is flat and papery with it, and there is no sweetness underneath. A genuine wet-hulled Indonesian is heavy and sweet and tastes of something; a stale bag tastes of less and less. It is the note that suits a dark roast best

Most origin character is destroyed by a hard roast. This one is not: cedar and tobacco deepen rather than disappear, which is why so many Sumatran coffees are sold at dark and why they hold up in a French press and a moka pot where a delicate coffee would not.

Low acidity is the practical reason people buy it

These are among the least acidic coffees available without going to a burnt roast, which makes them a genuine option for anyone who finds brighter coffee harsh. Body stays heavy while the sharpness is simply absent, which is a different trade from the one a very dark roast offers.

Who it is not for

Anyone who wants fruit or florals. Earthy and berry are close to opposites, and a bag promising both is describing either a blend or a coffee that has not made up its mind.
