Coffee with caramel and toffee notes

Caramel is the note that tells you most about the roaster and least about the farm. It is browned sugar, produced in a narrow window between sweet and burnt, and hitting it repeatedly across a batch is a skill. When people describe a coffee as sweet, this is usually what they mean.

The window is narrow, which is why it is a compliment

Take the roast a little short and the sugars have not developed, so the cup reads thin and sharp. Take it a little long and caramel turns to ash. A roaster who lands here consistently is controlling their curve, and it is one of the few things in a tasting note that reflects craft rather than geography. Caramel, toffee and butterscotch are the same family

We file them together on purpose. The differences between them are a matter of the writer's vocabulary rather than a measurable difference in the cup, and three near-identical pages would be three pages too thin to be worth reading. Molasses and brown sugar sit at the darker end of the same run, usually in a medium-dark roast.

Where it is added rather than developed

Salted caramel and caramel macchiato coffees are flavoured products: a flavouring applied to roasted beans, sweeter and far more obvious than anything roasting produces. That is a real thing people buy deliberately, and it is not the same purchase as a coffee whose sugars were browned well. Where a roaster declares flavouring, we record it, and a bag naming a dessert rather than a country is nearly always the flavoured kind.

It is the note most likely to survive a bad brew

Sweetness is forgiving. A caramel-forward coffee brewed slightly off still tastes pleasant, where a delicate floral coffee brewed the same way tastes of nothing. That makes this a sensible note to look for if you brew by eye rather than by scale, or if the coffee is going through a drip machine you cannot adjust.

Who it is for

Anyone who takes coffee black and wants it to taste sweet without adding sugar, and anyone buying one bag for a household with different tastes. It sits comfortably in a French press, a pour over and an espresso basket without needing a different approach in each.

Who it is not for

Anyone chasing acidity and origin character, which live at the light end and mostly in citrus and berry. Caramel is what develops as those recede, so the two are a trade rather than a combination.
