Spiced coffee notes

Spice covers cinnamon, clove, nutmeg, cardamom and black pepper, and it is the note where the in-the-bean question matters most, because the flavoured version of it is one of the biggest sellers in coffee.

Three different things arrive under one word

Some coffees are genuinely spiced by their origin: Indian and Indonesian lots in particular, where the growing and processing conditions produce clove and pepper without anything being added. Some are spiced by the roast, at medium-dark, where developing sugars read as warm baking spice. And some have spice flavouring applied after roasting. Pumpkin spice, chai and gingerbread coffees are the third kind, and the bag will usually say so plainly because it is the selling point.

Monsooned coffee is the clearest example of the first kind

Monsoon Malabar is green coffee deliberately exposed to monsoon winds for weeks, which swells the bean and strips acidity out of it, leaving something heavy, woody and peppery. It tastes like nothing else, it is entirely a product of process rather than flavouring, and it is a good demonstration that "unflavoured" does not mean "untouched".

Cardamom is usually added at brewing, not at roasting

In much of the Middle East, cardamom goes into the pot with the grounds rather than onto the bean, which is a preparation rather than a product. Arabic coffee covers how that works, and it is worth knowing before buying a bag hoping to recreate it.

Pods lean spiced more than beans do

Spice shows up disproportionately in capsules, partly because seasonal flavoured editions are easy to sell in a fixed format and partly because a strong note survives the small dose and short contact time a capsule gives it. If you are shopping pods on flavour rather than on system, this is one of the few notes that reliably comes through.

Who it is for

Anyone who likes a warming cup, and anyone buying seasonally. If you want the spice to come from the coffee rather than from a bottle, look for an origin on the bag and no dessert in the name; if you want the flavoured kind, that is a perfectly good purchase and the bag will be proud of it.
