How to choose a turkish coffee pot
A cezve, also called an ibrik or a briki, is the smallest and oldest brewer in coffee. There is no filter, no pressure and no moving part. You put very finely ground coffee and cold water in a small pot, heat it slowly, and pour the whole thing into a cup, grounds included. Everything that separates a good cezve from a bad one comes down to shape and metal.
The narrow neck is the design, not decoration
A cezve is wide at the base and narrow at the top, and that taper is doing real work. The wide base sits on the heat and spreads it across as much coffee as possible. The narrow neck then concentrates the foam that forms as the brew comes up, which is what produces the thick layer on top that Turkish coffee is judged on.
Pour that same brew from a straight-sided pot and the foam spreads out and collapses. The taper is why the shape has not changed in centuries.
It also controls the boil. A narrow opening slows the rise, so you get a moment to lift the pot off the heat before it climbs over the rim, which it will do quickly and without much warning.
Copper, brass and stainless steel do different jobs
Copper conducts heat several times better than stainless steel, which is why traditional cezves are made of it. Turkish coffee is brewed slowly and never allowed to reach a rolling boil, so even, responsive heat is the point, and copper responds the moment you lift it off the flame.
The catch is that copper reacts with acidic liquid, so a copper cezve is lined, almost always with tin. That tin layer is what actually touches your coffee, and it is consumable: it wears thin over years of use and traditionally gets retinned. Check that any copper pot states its lining. An unlined copper interior is a reason to walk away.
Brass behaves much like copper and is usually tinned too. Stainless steel needs no lining, survives a dishwasher, and costs less, at the price of slower and less even heating. For an induction hob, steel or a pot with a steel base is often the only option that works at all.
Size it by the cup, and then go smaller
Cezve capacity is quoted in Turkish coffee cups of roughly 60 to 90 ml, not mugs. A pot described as three cup holds around 200 ml in total.
Buy for the number of cups you actually make, because a cezve only works properly when it is between half and two thirds full. Too little liquid and the base scorches; too much and it boils over the narrow neck before the foam has formed. A large pot used for one cup is worse than a small one, which is the opposite of how most kitchen equipment behaves.
The handle and the grind matter more than the badge
The handle should be long, angled away from the pot, and made of something that does not conduct: wood, bakelite or a hollow metal stem. The pot spends its life directly over a flame and the handle is the only part you hold.
And the grind is not optional. Turkish coffee needs a powder finer than espresso, finer than most burr grinders will go. If your grinder stops at espresso, buy the coffee pre-ground for Turkish, or the water will never extract properly and the grounds will not settle in the cup.
