Single origin coffee

A single origin coffee comes from one place and is not mixed with beans from anywhere else. That is the entire definition, and the reason to buy one is that it tastes of somewhere rather than of a recipe. It also changes: a new harvest is a new coffee, and a roaster who sells the same single origin every year is selling you a slightly different thing each time. That is the point, not a flaw.

Single origin is a traceability claim, not a quality claim

This is the misconception worth killing first. The words guarantee that the coffee was not blended. They do not guarantee that it is good, that anybody was paid fairly for it, or that the roast was competent. A whole country counts as one origin, and a bag reading "Colombia" tells you about as much as a bottle reading "France". A bad single origin is entirely possible and there are plenty of them.

Traceability is a ladder and the rung matters more than the phrase. Country, then region, then cooperative or washing station, then a named farm, then a specific lot. Each step down is a step the roaster had to take deliberately and usually paid more for, and each step is harder to fake. A bag naming the farm, the altitude and the processing method is making a checkable claim. A bag saying "single origin" and nothing else is making none. Process changes the cup as much as the country does

Washed coffees, where the fruit is stripped before drying, taste cleaner and more acidic. Naturals, dried whole in the cherry, take on heavy berry-like fruit and fermented sweetness. Honey and experimental processes sit between. The same farm's beans can taste like two different coffees depending on which was done, which is why a serious single origin label names the process alongside the place.

Roast it light or do not bother

Everything you are paying for lives in the acids and aromatics that roasting breaks down, so a single origin taken to a dark roast level is an expensive way to buy a taste you could have got cheaply. Most good single origins sit at light or medium-light, and they reward filter brewing where there is nothing to hide behind. Pour over coffee is the usual pairing.

Buy it fresh and buy it small

Single origins are seasonal and the good ones sell out, which is a healthier sign than perpetual availability. Buy the size you will drink in a few weeks rather than the value bag, and prefer roasters who print a roast date: it is the only date on a coffee bag that means anything. Who it is for

Anyone who has started to notice differences between coffees and wants to follow them. It is the only way to learn what you actually like, because a single origin is the only coffee where the label and the cup are connected. If you find you consistently prefer one country, that is real information, and it is worth more than any score.

Who it is not for

Anybody who wants their coffee to taste identical every time. That is what a blend is engineered to deliver and it is a genuine skill, not a compromise. It is also poor value if your coffee always goes into milk or into a moka pot, where the specificity you paid for gets flattened out.
