Variable temperature kettles

Water at a full boil is too hot for coffee. Most brewing sits between about 90C and 96C, and the usual advice for a boil-only kettle is to let it stand for thirty seconds. That works. A variable temperature kettle removes the guessing and, more usefully, removes the drift.

The hold is worth more than the setting

Any kettle can pass through 93C on its way down. The feature that changes a brew is holding it there for the two or three minutes a pour over takes, because otherwise your last pour is meaningfully cooler than your first and the end of the extraction is weaker than the start. When comparing kettles, check whether there is a hold function and how long it lasts, not just whether the display has numbers on it.

Which coffee actually notices

Light and medium-light roasts are denser and harder, they give up flavour more slowly, and they want water near the top of the range. Those are the coffees where a few degrees is the difference between sweet and sour. A dark roast coffee wants water below boiling and is forgiving about exactly how far below. What temperature coffee water should be goes into it properly.

What the display does not tell you

Accuracy and the position of the sensor vary, and almost nobody publishes either. A kettle reading 94C at a probe near the element is not necessarily 94C at the spout. Treat the number as repeatable rather than absolute: what matters is that the same setting gives you the same cup, not that it matches a laboratory.

Where the money goes

Across this list the price spread is mostly the base, the build and whether the spout is a gooseneck. The thermostat itself is not the expensive part. If you brew filter, the two features together are the pairing worth paying for; if you brew anything else, neither changes your cup.

Who does not need one

Espresso drinkers, whose machine heats its own water; pod machine owners, for the same reason; and anyone brewing in a stovetop moka pot, where the hob is the thermostat.
