Copper is the only one of them that is also functional, since it conducts heat far better than steel, which is why it dominates our Turkish pot reviews for reasons that have nothing to do with how it looks. Unlacquered brass and copper will patina, and whether that is the point or the problem is the thing to decide before buying.

What to know about Gold, Brass and Copper Coffee Makers
This family covers three different things that photograph almost identically: solid copper, copper plating over another metal, and gold or rose-gold anodising that contains no copper at all. They behave completely differently in a kitchen.
On a cezve, copper is engineering
Turkish coffee pots are copper because copper moves heat faster and more evenly than steel, which is what lets the foam rise without the coffee boiling. That is the one place in coffee where this finish is doing a job rather than making a point, and it is why a copper cezve is normally lined with tin on the inside - bare copper reacts with what is in it.
Solid copper tarnishes, and that is normal
Left alone, copper darkens through orange to brown and eventually to a near-black patina. Nothing is wrong when this happens; it is the metal doing what metal does. Restoring the shine takes a mild acid, and a lemon half with salt works as well as anything sold for it. If you want the shine permanently and effortlessly, buy plated or anodised rather than solid.
Plated and anodised finishes are wear items
A copper-plated kettle or a rose-gold grinder carries a thin decorative layer over steel or aluminium. It will not tarnish, and it will wear through at the points that get handled - the handle, the lid, the rim. Abrasive cleaners take it off quickly. Treat these as a finish with a service life rather than as a material.
Common questions
Is copper coffee equipment safe to use?
Lining is the thing to check, and it is the thing makers are worst at stating. A traditional cezve is copper outside and tin or stainless inside, so the coffee never touches bare copper. Six of the Turkish pots here record a lining and all six are tin, several stated lead-free. The rest do not say, which is our gap rather than a verdict on them: unlined copper holding hot acidic liquid is a different object, so ask before you buy a pot that does not state it.
Does copper need polishing?
It darkens, and whether that is a fault depends entirely on you. Left alone, copper goes from bright penny to deep brown over a year or two and many people prefer it; a polish takes it back in minutes. Gold and brass plating does not patina the same way and should not be scoured.
What is the difference between gold, brass and copper here?
Copper is pink-toned and darkens; brass and gold are yellow-toned and hold their colour. The difference that matters is not the tone but whether the metal goes all the way through, and the specifications here say so by name. Seven of these record a solid copper body: the BCS, Demmex, Hakan, Jatisse, Silk Road Trade, Volarium and YJX cezves, one of them stated as 100% pure. The Diguo siphon records a gold-PLATED fulcrum, and the Stanley press records two layers of 18/8 stainless under its copper colour. Solid copper patinas and polishes back for as long as you own it; a copper-toned coating over steel wears through at the handle and the base and does not come back.
Does a copper coffee pot need to be lined?
If coffee touches it, yes. Bare copper reacts with acidic liquids and leaches into them, so traditional cezves are lined with tin on the inside and good ones are re-tinned when the lining wears through and copper starts showing at the base. A copper-clad pot with a steel interior needs no lining, because the copper never meets the drink.
Can copper or gold-finished items go in the dishwasher?
No, and this is the most common way people ruin them. Dishwasher detergent is alkaline and strips both the polish from solid copper and the plating from anything coated, usually unevenly and permanently. Wash by hand with warm water and nothing abrasive; restore solid copper with lemon and salt when it darkens.
