About induction compatible moka pots
Induction hobs heat by inducing a current in the pan itself, which only works if the base is ferromagnetic. Aluminium is not, and the classic moka pot is aluminium. So the first question about a stovetop brewer on an induction kitchen is not how it brews but whether it will heat at all.
The magnet test settles it in two seconds
If a fridge magnet sticks firmly to the base, the hob will drive it. If it slides off, it will not. That applies to moka pots, to cezves and to stovetop kettles alike, and it is more reliable than the packaging, which often says "induction compatible" about a pot with a thin steel disc that works poorly.
Steel, or aluminium with a bonded base
Two designs qualify. A fully stainless pot works everywhere and is heavier, more durable and usually more expensive. An aluminium pot with a steel plate bonded into the base keeps the classic body and the lighter weight. The bonded kind is the one to inspect: a plate that is genuinely bonded is fine, and one that is a loose disc rattling in a recess is a pot that will heat unevenly and eventually delaminate.
Small bases and small hobs
Many induction hobs will not detect a pan under about 12cm, and a three-cup moka pot can be smaller than that. Check the minimum pan size your hob states before buying the smallest pot in a range, because a brewer the hob refuses to see is a brewer you cannot use.
An interface disc is a workaround, not a fix
You can buy a steel disc that sits between hob and pot. It works, and it wastes the efficiency and control that made induction worth having: the disc heats, then the pot heats from the disc, so you are back to a slow hot plate. Fine occasionally, poor as a permanent arrangement. How to use a moka pot without burning the coffee matters more once the heat source is sorted, because control of the heat is most of the technique.
Frequently asked questions
Why will my moka pot not work on an induction hob?
Because it is aluminium. Induction heats by inducing a current in the pan, which needs a ferromagnetic base, and aluminium is not. A fridge magnet on the base settles it: if it sticks firmly, it will work.
Are stainless steel moka pots better?
For induction they are the reliable answer, and they are more durable. Aluminium conducts heat more evenly and is lighter and cheaper, which is why the classics are made of it. On a gas or electric hob the choice is about durability rather than compatibility.
Does an induction disc work?
Yes, and it undoes most of the point. The disc heats and the pot heats from the disc, so you lose the speed and the control that induction gives you. It is fine as an occasional workaround and poor as a permanent setup.
