A breve is an espresso drink made with steamed half-and-half in place of milk. On an American cafe menu a breve latte is a latte with the dairy swapped, and a breve on its own usually means the same thing. The result is richer, sweeter and noticeably heavier than the milk version.

What breve milk is

Half-and-half, which is what the word breve refers to on a menu, is a blend of whole milk and light cream sold ready-mixed in the United States. It sits somewhere around 10 to 18 percent fat, against roughly 3 to 4 percent for whole milk.

The Italian word breve means short or brief, which has nothing to do with cream. The name is an American cafe usage, and in Italy you would not be understood if you asked for one.

Why it steams differently

Milk foam is held together mostly by protein, with fat adding richness. More fat makes a foam that is denser and silkier but grows less, so half-and-half never swells in the jug the way milk does. Expect a smaller, heavier layer on top rather than a tall cap.

It also scorches more readily. Keep the steam short and stop while the jug is still comfortable to hold, well before the point where milk would be done, or the sweetness turns cooked and slightly fatty. The general technique, and why temperature is a hard stop, is in what good steamed milk is.

Breve against a latte

  • Build. Identical: espresso, steamed dairy, a thin layer of foam.
  • Texture. The breve is thicker and coats the mouth. A latte is lighter and more liquid.
  • Sweetness. The breve tastes sweeter with no sugar added, because fat carries flavour and softens the espresso's bitterness.
  • Coffee. The latte lets a little more of the espresso through. Cream is very good at hiding a shot.

The calorie trade

Half-and-half carries roughly twice the calories of whole milk by volume, so a breve of the same size lands at about double a whole-milk latte. It also carries slightly fewer carbohydrates per cup, because some of the milk has been replaced by cream, which is why breves turn up in low-carbohydrate diets. Whether that trade suits you depends on what else you drink in a day, and calories in coffee puts the common additions side by side.

Making one outside the US

Half-and-half is hard to find in much of the world. Mix it yourself: equal parts whole milk and single or light cream gives a fat level in the right range. Double or heavy cream is too rich to steam well and will not foam at all in a useful way.

Pull a double espresso, steam about 150ml of the mix gently, and pour. The drink is small by latte standards, and that is deliberate: it is filling.

Because breve names the dairy rather than a recipe, it can be applied to almost anything on an espresso menu. A breve cappuccino has the same foam-heavy build with half-and-half, which gives a smaller but very dense cap. A breve mocha adds chocolate and is about as rich as coffee drinks get. An iced breve skips steaming entirely and pours cold half-and-half over espresso and ice, which is the easiest version to make well at home because there is no scorching to worry about.

Someone who wants a dessert-like coffee without syrup, or who drinks an espresso drink as a treat rather than a daily habit.
